How much Brett for bottle conditioning
Hi all, I'm splitting a saison batch, 5 gallons that will be bottle-conditioned without Brett, and 5 gallons that will be bottle conditioned with Brett. I'm wondering how much Brett to pitch at bottling. I have a Wyeast pack--do I pitch the whole pack into the bottling bucket, half, or less? Any thoughts would be greatly appreciated. Thanks!

When I've typically added Brett it has been individual dosing - so I use a pipette and add 1-2 mls of slurry per bottle.

If you are doing the whole batch I'll bet the 1 vial/pouch is enough. It doesn't take much.

Just ensure your finishing gravity is very low on the saison or you plan on gaining carbonation over time. As a rough estimate every gravity point adds .5 volume of CO2. That can add up quickly.

You will have a lot of sediment with the whole pack.
