Bottle Priming with Brett
I'm brewing a saison today and am going to bottle prime with ECY-03B. Any insight into bottle priming with brett? Never done it before.

I think it just takes a little practice to get a feel for how much attenuation you'll see in the bottle. I've used this strain a bunch. Even if your saison finishes very low, I'd expect to see around 1 additional volume from the 03B. Try and forget about them for at least three months.

I bottled a biere de mars with this strain about three months ago. The beer was at 1.010 and was bottled still. It seems like it's close to 3 volumes now, but it's very fizzy and not done conditioning.

Quick question: how much Brett do you pitch for bottle priming? I've got a Wyeast smack pack of Brett Brux--whole pack, half pack, less?
