100% ECY-03B fermentation
Anyone use Al's Fantome brett strain in a 100% fermentation? I'm assuming its brux. and I haven't seen a whole lot of 100% brux fermentations.

Any comments on brett b as a primary fermenter in general? I'm thinking of using it for a biere de garde to be used in a blend to make a cable car clone.

For a cable car clone, I would just make a biere de garde with sacch. If you ferment out with ECY-03B first, there may not be as much souring potential. You can use the brett in secondary when you bring all the beers together, but since you'll need souring bacteria from something like a lambic pack I don't think you'll notice much contribution from the ECY-03B.

Doesn't brett primaries not dry out that much? I'm going to blending with an already soured saison...that should be plenty of souring potential no?

Even in primary Brett is typically more attentuative, but it depends on the strain of Sacch. Either way I'm sure your plan will produce a fine beer, but that's not the way Lost Abbey does it.
