Lambic papers
This appears to be a fairly recent one many may not have seen on the flavour of lambics a dissertation from a year ago. "Characterization of aroma and flavor compounds present in lambic" http://vtechworks.lib.vt.edu/bitstream/handle/10919/19203/Witrick_KA_D_2012.pdf?sequence=1 Does anyone happen to have an archive of any of the papers listed here http://archive.is/qpk3i ? I am hoping that some kind soul has dug them up in the past and would be willing to share them? Specifically Yeasts in mixed culture with emphasis on lambic beer brewing. H. Verachtert, Shanta Kumara, E. Dawoud In Yeast: biotechnology, and Bioengineering, eds Verachtert and De Mot pp. 429-473 Fatty acids and esters produced during the spontaneous fermentation of lambic and gueuze M. Spaepen, D. Van Oevelen, H. Verachtert J. Inst. Brew., 84, pp. 278-285 (1978) Microbiology and Biochemistry of the natural wort fermentation in the production of lambic and gueuze. D. Re: Lambic papers
That's a good list. I'm interested in some of these as well and I might be able to help out with finding some of these and other beer papers.

Re: Lambic papers
I will have to check through the collection of papers I've saved when I was in college. I know I have a bunch of Verachtert papers from the 90s.

Re: Lambic papers
Hey Cask1, did you get a chance to look through your papers? I have the 1976-1978 papers from that list but not the others. I'm definitely interested in others from this list if you have them.
