Bottle Conditioning with Brett Trios
I am ready to bottle a berliner weisse that has been at a stable gravity of 1.004 for a few months now, and was thinking of using the Trois strain to carbonate with. Does anyone have thoughts on doing this? I have used brett before but never for bottle conditioning. Thanks!

I used trois in a berliner and it turned out really well. The character is a good match for the beer.
