Crash Cool Primary WLP655
First time doing a Flanders red, I pitched WLP655 into primary with no stater. It took off great and is now still going after I hit my FG. Do I let it go or crash cool it and transfer?

How long has it been since you brewed? I usually rack my Flemish-type sours to secondary after primary fermentation ends and most of the yeast has dropped out. No rush, usually 3-4 weeks.

I am 14 days in. I just want to leave enough sugars behind for the bugs to work. Can I back sweeten?

You can add some maltodextrin down the road if you want. Simple sugars will just feed the brewer's yeast if you add them too soon. What is the gravity now?

FG 1.015 was my target

Now at 1.012

That should still be fine. If you aren't getting much sourness after six months or so, and the gravity is down to <1.004, I'd probably feed it.

I've got my first beer aging with 655 now, not much character yet, but I just racked it onto fruit after several months split between two 20L oak barrels.

Great, so I am just going to let it ride out then. Leave in primary for two more weeks then rack.
