advice needed for group barrel aged saison
hey,

my club and i are approaching our third use of our used red wine barrel. the barrel is still "clean".

year one was a robust porter, year two an imperial brown,

now we're thinking of a Saison (however, no bugs this year) .

any ideas for a recipe?

i'm thinking it need to be a big beer to hold up to a year of aging.

The maltose falcons have a clone recipe on their website for Dupont's Avec, which is a very big saison. That would be my choice for a saison worth aging for a year.

A strong dark saison might also pair well with the oak and any red wine character still left in there.

i was voted out. so no saison this year. it will be a barley wine. but next year after there is no oak flavor left, we will hopefully bug that baby !

Your right. I'm also surprised, but it seems to be quite clean.
