Total Acid test for sour mash?
I've been listening to all the podcasts I can find for the last few months. There's an interview with Dan Carey from New Belgium on the Sunday Session where he recommends using a wine acid test kit for sour mashes. Anyone use the total acid percentage instead of pH for sour mash or wort?

What is the benefit of doing this over just measuring the pH?

I've never tried, but noticed you said New Belgium and not New Glarus.

Ha, thanks James. Not sure if that's Freudian or me just being dumb.

Don't know what the advantage would be, I'll listen to it again.
