First. Contrats to all who made it to the 2nd round of the NHC.
I brewed a 1060 saison with WL565 that is at 1007 after 7 days(I pitched at 73F, held at 80F). I am planning on letting it sit at ambient (~75) for a couple more weeks.
I have not used this yeast before and would like to hear your observations on how long it takes for this yeast to drop out, such as time/temp or, if you can't take it anymore and CC.
