WLP565 dryness
Hi all, brewed my first saison with wlp565. 1.050 OG, pils, 1# flaked rye, 1# sugar. 147F mash, fermented at 85, got down to 1.008 in 3 days! But, hasn't moved since.

I read a lot about real dry wlp565 fermentation, is this bottle ready? Hasn't budged in 4 days.

Oh yeah, pitched a 1.5L starter, but underoxygenated, hoping to get more esters.

I haven't used it personally, but have read that it often does 2 cycles of fermentation.

That is pretty good attenuation, but I would wait a couple weeks before bottling.

Wait!!!!!! This yeast can take up to 2 months to finish. Or you could just add another yeast strain to finish it off since the beer now has the character of the first yeast strain - this is what I would do.

Thanks guys! I have some 3711 that I was growing up in case it stuck @ a higher gravity. I'll just pitch that and try and knock off a few points. I love this forum!

565 finished w/ 3711 is a beautiful combination, finishes quicker and still has lovely character from the 565
