Has anyone used Quince in a beer? I am interested in this, I have a pretty good idea of what I want to do, but thought I would check in with others first. I am thinking a slightly more robust saison as a base beer, very dry and light and not too bitter.
I would cook them in some sugar syrup, definitely seed them, and to be on the safe side, maybe peel them. But I'm not sure if peeling is necessary. Thoughts?
